- 1 shredded apple
- 1 tablespoon chia seeds
- 1 tablespoon shredded coconut
- 1 tablespoon raisins
- 1 tablespoon almonds or sunflower seeds
- 1 pinch cinnamon
- 1 tablespoon buckwheat groats (optional)
- 1/3 cup water or cashew milk
Recipe Directions
- 1. Shred your apple using a hand shredder. (If making only one or two bowls, I use a mandoline slicer with the shredder attachment. If making this for many people, probably easiest to shred in a food processor.)
- 2. Place shredded apple in bowl, and top with remaining ingredients.
- 3. Top with the cashew milk (best) or alternatively use water.
- 4. Stir vigourously. Within a couple of minutes the chia seeds and shredded coconut will absorb the liquid and you will have a delicious, ready to eat raw breakfast cereal.

In fact, it is the shredded apple that makes up the recipe - and gives it a stellar texture!

this is my new favorite breakfast to make! I don't use chia seeds- but it still tastes AMAZING and I don't know why I haven't been eating this for breakfast before!

This is delicious! So refreshing. I love it. Already had two days in a row. It's actually a lot and I feel completely satisfied after eating it. It doesn't take long at all, especially if you already had the Cashew milk from the day before. By the way, your Cashew Milk recipe...to DIE for. Love it too.

that sounds so tasty!!! it looks pretty low on protein/calories, is that enough on its own or do you have something else with it?

I might have two servings, plus if you add almond milk etc. it bumps up the values (these are calculated without optional ingredients, and the nut milk is optional)

So so delish! Added a little ground cardamon powder, gave it am Indian dessert flavour with the coconut almond background
???are Pistachio nut good nuts , was thinking of sprinkling on top next time... So many ideas from you amazing recipes

Dude!! This is a genius idea with the cardamom!!!! I had an Indian dessert like that once, and I hadn't thought about it until this moment really. It was creamy with pistachios and some kind of spice, which was probably cardamom. I gotta try this. Thank you for the inspiration! It is hitting me the right way at this exact moment, also I think I might have to do a similar thing with my sweet chia pudding recipe (cashew based creamy goodness)

Another great recipe - quick, easy and oh so morish !
This has introduced me to chia seeds, raw unsprouted buckwheat and your amazing cashew milk recipe.
I love all the things in it and adapt to what I have - using grapes instead of apples at the moment as we have a glut.

Simply delicious! I've even put the dry ingredients into single serve jars in my fridge; all I have to do in the morning is add the grated apple and whatever nut milk I've got. Thanks for the great recipe Laura-Jane!
