A very generous quart; 8 people
Ingredients
3 bananas (frozen)
½ small pineapple
1 orange (I used Valencia)
1/8 cup blue agave nectar
1 cup water
½ cup coconut (dried, shredded)
Recipe Directions
1. Peel the bananas, pineapple, and orange.
2. Put the fruit in your blender bowl (I used my Vitamix) with the water and agave nectar. We don’t like really sweet stuff so you should put in additional sweetener to your taste.
3. Blend smooth.
4. Pour into gelato/sorbet/ice cream maker bowl and freeze.
5. When done, sprinkle with coconut and serve.

I wanted something good for dessert and being partial to “ice cream,” I thought I’d whip something up fast.
So since I had half a small pineapple left in the fridge, that was the main flavor.
I used the frozen banana for the texture and “cold” so it wouldn’t take so long to freeze.
I added the orange as a bridge flavor between the sweet of the banana and the tart-sweet of the pineapple.
I actually wanted to put the shredded coconut into the ice cream at the end like a ‘crunchie’ but by the time I got to the kitchen to do it, it was already overflowing the gelato maker so I just sprinkled it on the top after it was served.
It tastes awesmoe! The picture is 1/2 of what it makes minus what my husband had eaten before I remembered that I needed to take a picture (the missing part is turned to the back-- lol!)
You could serve 8 people generously from what this made. You could actually leave out the 1 cup of water and it would fit better into the frozen bowl of the gelato maker.

Thanks for the question Emeraldgem. No, I froze it using my gelato maker and that way it comes out soft-serve so no need to soften-and-stir. That slightly melted look in the picture is actual melting. I forgot to take a picture before we started eating it. So when I remembered about the photo, I grabbed my husband's bowl and shot a picture of it as he was eating it from the bottom up on the other side (the side you don't see - LOL!) leaving a good shot on this side. I had just started eating it right from the top down and my bowl looked pretty funky!

Hmmmmm? I have an icecream maker with the bowl that you freeze, when I moved I lost the churner. After you frooze it, did you let it melt some and then stir?

I made this and added few tsps of coconut oil, and I didn't have an ice cream making bowl... it's been sitting in the freezer for a good hour now and it's still trying to freeze. I thought the coconut oil would help the freezing process better... we shall see how it turns out. I might have to let it freeze overnight. Hopefully it won't turn into a block of sweet ice. On the bright side, at least I didn't burn the house down trying to make a desert. I should've poured it into ice cube trays and use the cubes in smoothies instead of regular ice. Eh, next time.

Even though my machine had a box that said "Gelato Maker" it really is the regular electric ice cream maker with the bowl that you freeze. You can pick one up at Wal-Mart or K-Mart for about $29. I got mine about 6 years ago at Goodwill for $5 and it's been working perfectly ever since. Thank you Waterbaby and Sky Princess for looking at my recipe. I'm looking forward to hearing what you think of it.
