1/2 tsp lemon juice
1/4 cup young coconut water
young coconut meat of 1 coconut
Recipe Directions
Blend all ingredients together until smooth. Set in the fridge for 15 minutes. Serve on top of sliced kiwi and papaya or any fruit. Good for breakfast.
Note: Coconut meat is different depending on the coconut. Most of the time the meat is meaty and sometimes really jel like. You want to have the coconut meat pretty meaty.

Great idea! I make a non-fermented Chai Yogurt with walnuts and coconut water, but w/o the lemon juice, so it's missing that appealing tangy flavor.

I made this today! It was amazing. It shocked me how yogurt like it actually was. Amazing really.
I used a lot more lemon though. To give it the tang that it deserved. Also I made mine thicker. Kind of a hybrid of regular and greek yogurts.

You could add rejuvelac or acidophilus powder for the sake of the cultures. You really don't have to use a highly processed soy product.

Couldn't you just add a small bit of cultured soy yogurt for the cultures sake instead of lemon and let it sit. Isnt young coconut more jelly like tho, so you would want a mature coconut altho they have a more coconutty flavor.
