Serves 7
Ingredients
2-3 cups spinach leaves (1 package)
1/2 avocado (whole avocado will make it more creamy)
1 med size red bell pepper (wash, remove seeds)
1/2 cup hulled sesame seeds
Small slice white onion, chopped (don't use too much)
1/2 garlic clove, Chopped
Cucumber (3 inches of med width), Washed. With or without skin
Pinch sea salt
1/4 cup Bragg Liquid Aminos
2 cups water
1/2 tsp fresh ginger (optional)
5-10 leaves fresh basil
5-10 leafs or a twig of leafs fresh mint
Recipe Directions
Add all ingredients to your blender. Blend to your own desired consistency. Can serve immediately. This soup goes really nicely with Triscuits or Wheat crackers, can also serve it in topped off Red or Green peppers. Very delicious, very healthy. To spice it up, you can add 1/2 a jalapeno. I like to keep it somewhat thick by using a little less water, and dipping my wheat crackers into it (but that’s me). Add more water and blend longer to make a fantastic vegetable juice drink. Everyone I’ve ever served it to loves it.
