Ingredients
1 cup cashew pieces (soaked for 4 or 5 hours)
1/4 cup packed dates (pitted, cut in half, soaked for 30 minutes)
1/2 cup reserve water (from soaking the dates)
1 1/4 cups fresh cherries (pitted, coarsely chopped)
1 cup firm young Thai coconut meat (I used 1 large coconut)
1 cup coconut water
1/2 cup and 1 tablespoon of agave syrup
1 vanilla bean (scraped)
1 tablespoon vanilla extract or 2 vanilla beans
2 pinches of sea salt
1 tablespoon coconut oil
1 capful cherry extract (Boyajian brand)
2 to 3 tablespoons raw cacao powder
Recipe Directions
1. Add all the ingredients into the Vitamix and blend until smooth.
2. Pour into a container and chill in the fridge until nice and cold (several hours or overnight).
3. Pour the mixture into the ice cream maker (according to the manufacturer’s directions). It takes about 30 minutes to reach a nice soft serve consistency.
4. Stick ice cream into the freezer for a couple hours for a firmer texture that you can scoop with an ice cream scooper.

By JoyceHAfter purchasing our new ice cream maker over the 4th of July weekend, we couldn’t resist another weekend of experimentation.
My husband loves fresh cherries so I brought home a 2 pound bag of big fresh organic cherries (from our co-op).
This turned out amazing! I believe I had beginners luck creating my own recipe! My husband absolutely loved this rich decadent ice cream.

Hi Michelle, So glad you and your husband enjoyed the ice cream! :-)
The almond extract sounds like the next best thing if you can't find the cherry extract. I'll have to try it too!

Decadent Chocolate Cherry Ice Cream
This is the best ice cream I've made! Thanks so much for sharing this. I couldn't find the cherry extract so settled for almond extract instead, but it still tastes wonderful. Even my husband likes it! :)

Hi Carrie! Yes I just love Russell's recipes too. His tart crust was just lovely and was great with my choc cherry ice cream.
I got the Cuisinart 2 quart ice cream maker. Here's a link with the details:

Actually Cuisinart also makes a smaller 1 1/2 quart ice cream maker that is less expensive (around $50). And this model is easier to find. Most stores had the smaller model. I had to search a bunch of stores to find the bigger one. If it's just you eating ice cream, go for the 1 1/2 model

Yum, Yum, Yum! I'm juicing now, but I think i'll have to try this soon :) I love how nice your desert cups came out! I love Russel James' creations ;) What ice cream maker did you get? I'm thinking of purchasing one... I like the ones that make small batches since it's just me eating the raw ice cream. If you can suggest one, that would be great!

Hi Joyce....I love the macro lens on the camera...makes the food look like you can just reach in the computer and grab it:)

Hi Evergreen, thanks for the kind words. I think the white tablecloth was a nice change. My husband discovered he has a macro lens on his camera so he's been taking better photos lately. Mine were just OK so I didn't use them. Turns out my husband is getting good with the camera :-)
I love the mango sorbet in macaroon crusts on your blog! Now that's a nice summertime recipe we'll have to make soon. I bet strawberry sorbet would be good too! :-D

Sorry folks. I just edited my recipe above to include the cacao. Can't believe I spaced this!!! One of the key ingredients! :-)
I used between 2-3 tablespoons of cacao powder.

I made this ice cream dessert too and it was very good :-D
