This recipe reminds me a little bit of dolce de lecce from Ben and Jerry’s Ice Cream.  It is very smooth, and I really love it! You can put less maple syrup if you like. Look for the soft consistency.

Ingredients

1 cup raw cashews
1/2 cup agave nectar
1/2 cup orange juice

Recipe Directions

1. Blend it in the Vitamix or food processor.

2. Place in freezer for about 1 hour.
