Serves 2 in our house
Ingredients
1 or 2 avocados
1 lime, juiced
1 clove garlic, peeled
½ teaspoon Sea salt
½ sweet onion, yellow or purple
1 tablespoon or more fresh oregano
¼ teaspoon or more cayenne
Filtered water
Recipe Directions
Put avocado(s) in blender. Add in everything but the water (I often use more garlic—suit your own taste buds). Start blender and add water until salad dressing consistency you desire. Taste for seasoning and adjust to your liking. You may want to adjust the lime juice up depending on the number and size of your avocaos.I sometimes substitute sun dried tomato soaking liquid in place of water if I’ve got any.That’s it! Serve over or under almost anything.

By suekoThis is quick to whip up in the blender and has the added bonus of tasting good without adding any oils. As with most salad dressings, this can also be used as a dip.

I have been looking for a recipe for dressing using avo's that does not use any additional oil. I will definately give this one a try, the tastes mentally go together well.
