Ingredients
1 Eggplant medium (peeled, thinly sliced)
½ tablespoon salt
1 ½ agave nectar or maple syrup
2 tablespoons soy sauce or Braggs Liquid Aminos
2 tablespoons apple cider vinegar
1 teaspoon chili powder
½ teaspoon paprika
½ teaspoon cumin powder (optional)
Recipe Directions
1. In a mixing bowl, add all ingredients except the eggplant and mix until thoroughly mixed.
2. Add the eggplant and allow it to marinate for at least 30 minutes. Dehydrate eggplant on 105 degrees until completely dry (12 hours or more)

By RawNibblerThis bacon taste and looks very similar to bacon (like the veggie substitute by morning star).
It's salty, spicy, and sweet.
It takes forever to get crispy but very dry is still excellent simply tear into bite size pieces and add to sandwich.

I haven't tried his recipes, but I have heard of him. I was inspired by other raw recipes, but this was a winner for me. I love it as a snack too. I hope you like it.

Accidentically I fixed a meal like this a few days ago (without the egg!). I found it in a book called Raw food fast food by Philip McCluskey. The combination of cumin an paprika is stunning. It's even been used alot in recipes from the middle east.

Eggplant Bacon
Not a fan of the "bacon". Perhaps I sliced mine too thinly and the flavors got too concentrated. I used a peeler and made thin strips. I will say they do look like turkey bacon. I am going to try to salvage them by using them as garnish like bacon bits though.

Let me testify (I'm a witness too BTW)...this bacun looked like bacon before I got it in!! I licked the bowl too. Oh! I used smoked paprika...makes this is glorious. Dunno if I can do this but here a link for smoked paprika:

This is so yummy! I must be real crap at slicing eggplant (I just used the peeler on a thick setting) because I got bacon in 3 hours! Woooo! Which is awesome, for me, actually. I am gonna save some for sandwiches!

This sounds delicious and I can't wait to make it! FYI, I can usually find Liquid Smoke by the BBQ sauce and Worcestershire sauce and such at the grocery store. The kind that I get comes in a small glass bottle, a little larger than most of my spice jars. Use it sparingly because it is strong! A few drops as justagirl suggests will most likely do the job.

Hi, I've made eggplant bacon before and it's delish. I added a few drops of smoke flavoring. Not everyone agrees with that, but it does make a great smokey flavor to the "bacon". Keep up the good work.

Looking forward to trying this recipe. Just started trying raw a week ago. Would love some good bread recipes, such as onion bread. I copied and pasted the recipe and there was an interesting notation, not visible until I copied it to a document. Are you my sister? ldtryingraw in Katy, TX..

DELICIOUS!!! I ate them more as chips than bacon and they were so good! By the way, does anyone has any idea of how many calories the whole recipe has? Just wondering.. thanks!
