Ingredients
1 large and ripe avocado, mashed with sea salt
1 peeled and chopped zucchini OR 1/2 head of soaked broccoli florets (no stems)
1 small chopped shallot (green only)
1 pinch of lemon juice (optional)
1 clove garlic (optional)
1 sprinkle sea salt
Recipe Directions
Combine all ingredients plus a little water for blending into a food processor/blender and mix until smooth. Adding the lemon juice after the first serving is a great way to keep it fresh for tomorrow. This is really good as a dip or salad dressing. Perfect for those avoiding sweet fruits.

Sometimes I use either the zucchini or soaked broccoli tops and sometimes I add some of each for variety, a chunkier hummus or if I just want to eat the hummus by itself.
