YieldAbout 2 cups; serves 4-6
3 cups sweet potato or yam (peeled, chopped)
4 cloves garlic
¼ cup raw tahini
1 tablespoon olive oil
2 tablespoons lemon juice
1 tablespoon nama shoyu
¼ cup water
1½ teaspoons sea salt
1½ teaspoons cumin (ground)
½ teaspoon cayenne pepper
¼ teaspoon coriander (ground)
1. Mix all ingredients in blender or food processor until smooth.
2. May garnish with fresh parsley.
