1 big chunk butternut or other squash
1 heaping spoonful of salsa
1 dash of sea salt
Recipe Directions
grate the squash (if you have a cheap ass blender like I do)
Put it in the blender with water added to desired consistency
Add a spoonful of salsa and keep blending.
Yum.
(If you like, you can warm it ever so slightly before eating to add to the soup feeling)

This recipe is good, but to make it smoother, use a strainer to remove the pulpiness.

I make big batches of salsa on sundays and always have some in the fridge. That's why this soup is so easy for me. I chop onions, tomatoes, cilantro, garlic, banana peppers, sometimes corn, and mix it with lemon juice, olive oil, salt, and cumin.
