Ingredients
NOODLES
2 medium zucchinis
1 carrot
VEGGIE TOPPINGS
2 pieces green onion
1/2 cup portabella mushrooms
1/2 cup cauliflower
1/2 cup mung bean sprouts
SAUCE
2 tablespoons sesame tahini
1 tablespoon lime, lemon, or vinegar
2 tablespoons tamari or soy sauce
Garlic (to taste)
Ginger (to taste)
Recipe Directions
1. Use a spiralizer (or mandoline, or peeler) to create your noodles.
2. Add in veggies of your choice then top with the sauce. It tastes even better after it sits to soak the flavors the next day.

yeah! I was about to grate the carrots or shred them...but since the spiralizer was already out I tried it. they came out as short little pieces (not much like noodles), but easy and quick to prepare...so YES it works.

I've never used my spiralizer on carrots, does it work well?

This looks lovely - I've been wanting to make a thai dish recently so think will experiment tonight using this as the starting point.

Don't forget the cilantro! Pad Thai always has cilantro!
I just made this tonight and it's tasting pretty great. We'll see how it is tomorrow after a night of soaking. Thanks for the great recipe!

I tried this last nite and it was awesome but ammanoel is rite, it could have used a touch of sweetner to it so next time I would add a bit of agave to the sauce. Thanks rawsayrita!

You're welcome! Yes the tahini is great because it gives the dish that peanutty flavor and richness. I love tahini in my asian inspired dishes!

I've never thought to use Tahini in a Thai dish... i'm definitely going to have to try this soon! thanks for posting!

this sounds awesome. i LOVE pad thai. it would be excellent with something sweet in the sauce as well (whatever sweetener you use), pad thai typically has lots of lime, and also sweetener.
