As a lifelong vegetarian and sometimes vegan, I have always enjoyed this recipe, now it is something of a comfort food I use when I am feeling like having something more “normal”.

Serves 1, multiply as desired. -

½ cup oats
¼ cup dried fruit (I like raisins)
¼ cup nuts (I like almonds)
1 cup water (more or less, to "taste")
Recipe Directions
Add all ingredients to a suitably sized jar or similar container. Shake once or twice to mix. Refrigerate overnight. Enjoy.

i did something similar to this for breakfast this morning-i soaked oats in rejuvelac and a chopped apricot with cinnamon. yum!
