Ingredients
3 tomatoes, chopped
1 C baby carrots(sliced lengthwise into sticks)
4 handfuls Spring Mix
2 avocados
1 T lemon juice
1 t Cayenne
2 slices onion, diced
1 C raw burrito
1/2 cup rich cheddar sauce
Recipe Directions
Make guacamole by mashing avocados to desired consistency, add 1 chopped tomato, onion, lemon juice and cayenne and stir. Place carrots on plate in a solid layer, like chips, and top with handful of Spring Mix. Roll burrito mix into balls and add to salads. Top with guacamole, tomatoes, and cheddar sauce. If you want an extra saucy salad, top with your favorite creamy dressing.
