Serves 4 or enough for a cake
Ingredients
1 cup young Thai coconut meat
1 cup macadamia nuts (soaked)
1 cup water
1 teaspoon vanilla extract
1 vanilla bean (sliced)
Dash of sea salt
3/4 cup raw agave or honey
Recipe Directions
1. Blend all the ingredients in a high speed blender until smooth.
2. Place in a bowl and put the vanilla bean in the mixture.
3. Chill for two hours, or until you can’t stand it anymore.

By bellaseraRich, creamy, and so much like vanilla pudding, you’ll be amazed. Totally cured my craving for it.
Take out the vanilla pods and put aside if you're going to make a new dessert right away using them. Otherwise, toss.
This can also can be made into variations like slightly thicker for vanilla icing. Just use less water.
So good.

Just moved back to Texas almost two years now, I miss the Kansas City, the snow play, sleding, the seasons. Texas just kind of blends into one big season with most of it being HOT. I'd really like to move to Colorado or the mountains, but I don't mind the cold so much as I can get warm. *grin* ya ya..cup might be a bit much. Do you have trouble finding Young Coconuts up there? When I lived in KC the only place I could find them was at the Asian markets.

yea coconut oil is iffy... i started putting it on my skin everyday, and this was when i first became a raw foodie then i broke out like no tomorrow but im not sure if its because of the butter or because of the initial detox. its gone now, but i really limit the use now

There is no where close by me that sells young thai coconuts :( I have to make a special trip to a bigger city for that. Bums me out because I LOVE coconuts. But we only have those old furry ones at the store and they're a pain to open up... plus I don't like all the fungicides they put on em.

Sure you can use almonds, what ever you like. Just make a smaller batch and experiment.
As for the horror stories just type in in goggle coconut butter for health. I forget the exact format I put in but I goggled it a while back and a bunch of stuff came up good and bad. It makes me feel kind of stick too, small amount is ok but anymore than that and I get a bit ill from it. Even this recipe I can't eat allot of the dessert but man is it good. I actually made it again and put less coconut butter in it.

Yeah, 3 cups of agave really sounds like alot. bellasera, could you tell me some of the horror stories of coconut butter/oil? I feel the same way as you do, coconut butter makes me feel sick it is way too rich. I'd be curious to see what bad stories about them are, I thought it was just me!
Also, could I substitute anything for macadmamia nuts besides cashews? I am trying to limit how many rich nuts I eat, like macs. Thanks!

Makes sense... I don't think I've ever put more than a tsp of coconut butter in a smoothie, so I've never had a problem. Doesn't sound like eating a cup would be any good. hahaha :)
India must be nice, by the way. I'm tired of the midwest cold :(

Maybe I'll put up a post see where we go. I get back from India end of April so maybe we could think about this summer or fall. Gonna take a bit of planning but should be dooable.

I've heard some bad and some good and can't decide what to think. I'm erring on the side of caution. LOL
I've heard people rave about what it's doing for them, their skin is great, they feel great etc etc.
Then I've heard people say it made them sicker than a dog or made them break out.
It's hard to figure out what really is going on there. But my thought is this, it's an oil and downing large quantities of oil even something like flax seed can't be all that good for you. I think it boils down to eat in moderation.

That's an awesome idea. There isn't much raw food oriented stuff goin on where I live.
So, since you started it... what's the deal with the coconut butter? Why's it bad? I've never heard anything about it.

Ohh not sure, I try and limit my coconut butter intake. I know some people rave about it but I've heard some real horror story's too. You could try it though if you wanted to. That's what I love about this site, all of us trying new things, giving each other ideas it's like a big huge raw family. LOL Wouldn't it be great to have a get together for a weekend some where from this site. No hoopla but just a raw food weekend retreat with a bunch of us. Just an idea. *smile*
