Raw brownie recipe

Shelf Life
5 days in fridge -
Yield
1 dish brownies
Ingredients
- 1 cup pecans (you can use walnuts in a pinch, but pecans are much better!)
- 1 cup dates
- 5 tablespoons raw cacao (cocoa) powder
- 4 tablespoons shredded unsweetened coconut
- 2 tablespoons honey or agave nectar
- 1/4 teaspoon sea salt
Recipe Directions
- 1. Place pecans alone in your food processor and process until the pecans become small and crumbly.
- 2. Add dates to the raw brownie recipe and process again until the mixture sticks together and the dates are well processed.
- 3. Add the remaining ingredients to this raw brownie recipe and process again until the mixture turns a lovely dark chocolatey brown. Stop processing before it gets too buttery. (There should still be air between the small bits so that you will be able to press them down into your brownie pan.)
- 4. Dump the mixture into a brownie dish or small cake pan and press down firmly using your clean hands.
- 5. Refrigerate this raw brownie recipe for a couple of hours. You do not have to refrigerate it, but it is much easier to slice when chilled. By the way, this is actually a raw brownie recipe that keeps its shape! So it can be good for serving to non-raw fooders because the presentation of this raw brownie recipe is good when chilled.
- 6. Store this raw brownie recipe in the refrigerator if it lasts that long!
- PS: For an even more delightful brownie, serve it with this easy, instant raw chocolate icing.
The Rawtarian's Thoughts

Raw brownie recipe -- finally, a raw brownie recipe that tastes like REAL BROWNIES!
I am quite surprised and amazed at how the texture of this raw brownie recipe resembles real brownies--especially after this raw brownie recipe is refrigerated for about an hour or even longer.
My husband thinks this raw brownie recipe needs chocolate icing, but I disagree. I think it's perfect on its own! (But it is true, everything is better with raw chocolate icing on it.)
You can also use this raw brownie recipe as a pie crust or as very chocolately raw truffles.
Good luck trying to keep this raw brownie recipe around for longer than 24 hours. This vegan recipe would be good for about eight small servings. Feel free to double the recipe if you want more or if you want to make it last longer. (I usually double it.)
Advanced optional tip: Throw 1 tablespoon cacao nibs into the mixture after processing and before squishing into pan for fun crunchy texture!

Raw brownie recipe
I love these, they are so addictive! I don't add any extra sweetener as I find the dates make it sweet enough, and I use half the amount of cocoa (still deliciously chocolatey). Sometimes I add almonds at the end and pulse briefly for added crunch and texture too. So yummy! They are great for satisfying those chocolate cravings. Thank you so much for sharing these quick, easy recipes, this is definitely a favourite :-)

Hi Natalie, Great idea about adding some almonds at the end for crunch! Also, if you make almond milk you might like my almond pulp brownies, they are similar to these but... chewier. Or something.

do you soak the nuts?

Hi Hannah, no, soaking is not required.
Here on my website you do not need to soak unless it is explicitly stated.

I can't stand pecans, coconut, or dates. I am slowly starting to like dates and coconut, but I pretend to be allergic to pecans at restaurants just because thinking of it is bad enough. I was going to use almonds (only nuts I have), but I thought - trust the internet lady...
I had a really good meal at a raw restaurant a few days ago, and have been hooked on finding raw recipes since :) I am also super lazy, so I don't like using the oven/stove

Hi Carol, I hear you about laziness. :) I am the same way.
But, I think you need to open up your mind a little bit. Said with love!
What I mean is that the idea is that with a recipe like this you can't actually taste any of the specific ingredients. It's kind of like saying that you hate eggs when a cake recipe calls for eggs. In a cake you can't taste the eggs, and in this brownie recipe you don't taste the nuts or the dates. you might be able to taste the coconut a little bit, so you could omit that if you like (or use hempseed hearts instead)

All I taste is chocolate :). I do feel the texture of the coconut, but the taste isn't there. I am still in shock that the brownie is mostly ingredients I refuse to touch and tastes so delish! Even my "I don't eat anything raw" husband liked it.
I did notice it got crumbly after a few days when I cut it, so I think it would go nicely as a cookie crumble topping to a thicker drink, like a milkshake/smoothie or latte.

Raw brownie recipe
I love these brownies. I actually made only half the recipe, cause I did not want to eat that much in one sitting. But then when I do go to eat them, I am able to eat a small square only, savoring each bite and then I am able to stop; so I get to eat a brownie a day (1-1.5 inch square) and have some for the next 3 days. Amazing!
I actually misread the directions once and by mistake use coconut oil instead of shredded coconut, and it was so good. So now when I make them I use half shredded coconut and half coconut oil. I then store them in the freezer. It is definitely good to lick the bowl (food processor) and spatula. Yum !!
Thank you so much Laura Jane for these delicious brownies - several of my non RAW friends are loving them too and got the recipe out of me :)

Hi Aen, Lovely to see your name pop up here :)
I love your tweaks, they sound like a nice twist on the basic recipe. I'll have to try it because I love frozen treats that use coconut oil! I bet they are kind of chewy that way?

Raw brownie recipe
Made this recipe this morning and half has already gone...I used carob powder instead of cacao and it was really tasty. It's amazyng how carob powder made it taste like cacao! Mine resulted a little too dry and difficult to keep in beautiful slices. I didn't have pecans so I used 3/4 cup of walnuts and 1/4 hazelnuts. I put only 3 tablespons of carob powder and 2 of coconut because it was looking too dry. Anyway, after 1 hour in the fridge it became more moist. Thank you so much for youe wonderful recipes!

Would this raw brownie freeze well?
The Rawtarian
Sep 15, 2013
Hi Hazel, They will freeze well, but you'll want to pop them in the fridge again before eating to defrost a bit (because when they're frozen they get REALLY hard, hard as a rock!)

I used soaked cashews, cacao powder, agave and coconut oil - amazing ontop on these brownies. Theyre really great as you only have a small portion and feel satisfied (I have mega choc cravings haha) anyway, thank you!
