Recipe Directions

  • 1. Roughly chop or break cauliflower into florets (little bunches). Don't include too much stalk.
  • 2. Place florets in food processor. Process into small rice-sized pieces.
  • 3. Transfer to a bowl.
  • 4. Add oil and salt. Stir with a spoon until well-combined.
  • 5. Ready immediately or cover and store for up to 3 days.

Much like noodles, rice is best served with something flavorful, not simply eaten on its own since it is quite bland. This recipe isn't very interesting on its own, but you'll be amazed how tasty it can be with the right sauce or flavorings. 

For example, serve cauliflower rice with your favorite vegetables and curry sauce or mushroom gravy, etc.

This "rice" keeps very well in the fridge. Make it in advance and enjoy it over the next few days! It's extremely handy to have on-hand all the time as a base for delicious healthy meals.

Different amounts of raw cauliflower: For every 1 cup of plain "rice" that comes out of the food processor,  add about 1 tablespoon oil and 1/8 teaspoon salt. (Feel free to make rice out of a head or two of cauliflower, then adjust the oil and sea salt accordingly.)

I use the 'pinky' trick. Warm your soup so that you can stick the tip of your pinky in comfortably. Or no higher than 115F if you have a thermometer. Often blender soups warm up after much blending, but not to a hot level. And yes, higher temps. do destroy nutritional enzymes.
Some member heat foods up in their dehydrators, like a rice dish, for example!

I ate it with mashed avocado mixed in and I also ate it with the raw meatloaf and gravy. Oh and in the bibimbap. It is delicious.

This rice is absolutely delicious in its simple form (just the olive oil) yet so versatile. I’m making it again tomorrow with the raw Alfredo sauce and one minced clove of garlic, a dash of ground pepper, and chunks of mushrooms. I love discovering Laura-Jane’s recipes for the most common popular dishes and finding them tasting better than their non-raw version... (my mind just wandered to rice pudding with raisins, ooh, and I’ll substitute the olive oil with raw coconut milk... yay!)

Made this again with the raw curry sauce and added chunks of portobello mushrooms, a pinch of chopped fresh parsley and one minced clove of garlic... ah, I luuuuv my raw trips to heavenly goodness!!! ?

So I tried to replicate my mother's Red Rice Pilaf recipe in the raw (thinking "how hard can it be?"), and with regards to taste, it came out nothing like it, so I added Laura-Jane's Raw Curry Sauce I had saved in the fridge, then and only then my pilaf was, um, edible and quite tasty ?... Also, I'm never eating real rice again when cauliflower rice is the best substitution and so much healthier.

I've been all through your web site and am so ready to try raw foods. I have one question though. Are any of these dishes heated at all? I love a warm bowl of soup in the winter, and warm "rice" recipes, too. Can these be heated to just "warm" or will that destroy the advantages of raw foods?
