This was a complete accident. I was making the “Nana milk” listed on the site with a few changes, and by the time I got to work and took out the “milk,” it had turned into mousse! Must be the pectin in the bananas!

1 large or 2 small servings

Ingredients
2 bananas
1 cup water
½ cup chocolate almond milk (Use your favorite recipe. I use the non-raw Diamond brand.)
Recipe Directions
1. Put all the ingredients in the blender and blend for about 2 minutes.
2. Pour into a glass or bowl and set on the counter for 2 hours.

Ha! This just happened to me, too! I was planning on making a nice banana, date, cacao shake... I blended it, then put it in the freezer to chill for a bit and when I came back to it, it had set into a very lovely mousse! I used a slightly under-ripe banana. I wonder whether that had anything to do with it...
