2 main course salads
Ingredients
1 cup yellow heirloom tomato, chopped
1 cup ripe mango, chopped
3 tablespoon fresh lemon juice
¼ cup water
1 head of bok choy, sliced 1/2" thick
1 large tomato, chopped
½ large papaya
Recipe Directions
To make the dressing, place the first four ingredients into a blender and process until smooth.
Cut the papaya in to bite sized chunks.
Toss the dressing with the sliced bok choy, papaya chunks, diced tomato and whatever diced mango is leftover from making the dressing.
