Ingredients
CREPES
½ cup dried coconut
1 chopped apple
1 cup flax meal
¼ teaspoon sea salt
2 cup water
1 lime juice (1 lime)
1 tablespoon curry paste (not powder)
1 teaspoon turmeric
CREPE FILLING
1 tomato (sliced)
1 apple (sliced)
1 small jicama (sliced)
1 avocado (sliced)
1 lime juice (1 lime)
Pinch sea salt
CREPE SAUCE
½ cup cashews (soaked 2 hours)
¼ cucumber (chopped)
1 lime juice (1 lime)
.125 cup fresh dill
¼ teaspoon sea salt
¼ cup water
Dash vinegar
Recipe Directions
1. To prepare the crepes, mix all ingredients in a high-speed blender until consistency of pudding. Spoon out on non-stick dehydrator sheets and form into flat circles. Dehydrate at 105 degrees for 2 hours. Flip over and continue to dehydrate for another hour or so.
2. To make the filling, slice all ingredients to a uniform size that will be easy to roll up inside the crepe.
3. For the sauce, mix together all ingredients in high-speed blender and pour over the rolled up crepes. You can also add the sauce to the inside of the crepe.
