Ingredients
1 Head of Cauliflower, Grated in a Food Processor
4 Green Onions, Diced
2 Tomatoes, Diced
1 Orange Bell Pepper, Diced
1 Jalapeno Pepper, Diced
2 tablespoon Fresh Lemon Juice
¼ Fresh Cilantro, Diced
1 Avocado , Mashed
1 teaspoon Chili Powder
1 teaspoon Paprika
½ tablespoon Sea Salt
¼ cup Cold Pressed Extra Virgin Olive Oil
Recipe Directions
Combine all ingredients in a salad bowl. Mix together well and serve.

I quite like this dish with cauliflower or even jicama, as Amanda has tried. My children much prefer it made with jicama and no cilantro. For me, I think the cilantro makes it fabulous!

Delicious and comforting! Inspired by your dish, I replaced the cauliflower with minced jicama.
