Makes a large bowl. Can easily be halved. Keeps well for a few days.

Ingredients
1 head of cauliflower (grated in a food processor)
4 green onions (diced)
2 tomatoes (diced)
1 orange bell pepper (diced)
1 jalapeno pepper (diced)
2 tablespoon fresh lemon juice
¼ cup cilantro (diced)
1 avocado (mashed)
1 teaspoon chili powder
1 teaspoon paprika
½ tablespoon sea salt
¼ cup cold pressed extra virgin olive oil
Recipe Directions
1. Mix together well and serve.

I love this recipe and make it quite frequently, sometimes experimenting with different spices. I've added mushrooms too and it's delicious.

This was so delicious. I am new to raw foods, have been eating a lot of fruit salad (fast and easy - c'mon, I'm a student...), and really wanted to try some actual recipes. So this was one of the first I tried. I added a teaspoon of cumin, and left out the jalapeno. I rolled some up in some romaine leaves - mm! So good! Thanks for posting the recipe!

This recipe is so tasty! So easy to make too. I was amazed by the similarity in texture of the processed cauliflower to rice. I added a dollup of guacamole and extra tomato on top and gobbled it up. Thanks for sharing!

Wow! This was my first dish as a raw vegan and having had cooked Spanish Rice just a few days beforehand, I can say that this was an awesome substitute for the original! I added some poblano peppers and ancho chili powder for a little more kick!

I just used a regular cheese grater to do the cauliflower - it worked "grate"! I added twice the amount of cilantro (beacuse my garden is bursting with it) a little cumin and left out the avocado to keep it light. A pretty tasty dish!

Holy moly--this tasted so good!!! I, too, made it w/ parsnips and as well added a bit of cumin. Rolled it in lettuce leaves and yum yum yum, the rest is history. Hubby loved it too!
This recipe is a definite must try!

My daughter was visiting from California and I was introducing her to raw foods, so I made this for her. She was here for 2 weeks and I wound up making it 4 times she loved it so much

yummy, i made this tonight, but i added some agave nector for a little sweetness with spice and it was delicious

Very tasty, but took me some time to prepare. I brought it to a couple of potlucks and people could not guess what it was. It's a bit heavy / creamy, so cooked food people enjoy it as well.
