2 cup mushrooms, diced or sliced
1 cup Nama Shoyu or Tamari
Recipe Directions
Soak mushrooms of choice in liquid for at least 10 min or as long as 6 hours. Discard marinade.
If you are using the small button mushrooms, you dont need to cut them up. They make real good appetizers.
You can sub 1/4 cup miso with 1 1/2 c fresh squeezed orange juice.

There is a very similar recipe to this in Juliano's book. He suggests using oil, however, I like it better with out the oil!!

And they are really good if you dehydrate them for 1-2 hours at 110° before eating too! :) I put them in a bowl with the marinade and dehydrate them...it just warms them up and makes them a little more soft. I used portobello mushrooms, just the tops, not the ribbing or stem. I'll try the button mushrooms next...thanks for the recipe! And the miso with orange juice sound good, I'll try that too! Thanks for sharing :)
