2 cup pinapple, chopped
1 red bell pepper, thinly sliced
1 orange bell pepper, thinly sliced
1 teaspoon ground black pepper
2 teaspoon jamaican jerk seasoning
1 tablespoon olive oil
add all ingredients to bowl, except lime wedges and cilantro, and toss together till pinapple and peppers are well coated with seasoning. spread out on a dehydrator sheet and dehydrate till warm. throw back in bowl and mix in cilantro and freshly squeezed lime juice. serve wrapped in lettuce leaves or your favorite raw tortillas.
