serves 2 for dinner and leftovers for the next day
Ingredients
2 green bell peppers (chopped into strips)
2 red bell peppers (chopped into strips)
3 cloves garlic (chopped)
3/4 onion (chopped)
Olive oil
Pinch of cayenne
5 tablespoons cumin
Green leaf lettuce
Recipe Directions
1. Chop all veggies in strips and place in mixing bowl. Add olive oil depending on how you like it. I used just enough to wet the veggies. Add spices. I might have even put more cumin in the mix so this is a guess on how much

yes lots of cumin. it makes it so yummy... but mix in as much as you like then taste and if you need more then add more.

Hubby and I tried these, but we changed the veggies. He used to make a great sweet potato hash browns with sweet potatoes, zucchini, onions, bell peppers, tomatillos and hot peppers. We used these and it made a wonderful spicy fajitas. It was great!
