LilEarthMuffin's Thoughts

A similar variation of this recipe i got from Ani Phyo but i decided to alter it a bit to suit my tastes because she used dates and a few other ingredients that i didn't have in my kitchen. Its super fast and super yummy and came together in my magic bullet in about a minute. Using the cherry tomato's gives the sauce a really nice orange-y color which looks pretty topped on a veggie pasta or spaghetti squash. ENJOY! :)

Mikfizzle, you're most welcome. I travel to visit my grandchildren and the VitaMix is a bit much for transporting. I have a Magic Bullet that works fine for me, and I can also use it to make smoothies for the kids. Smoothies and soups aren't as "smooth" as in my VitaMix, but it's definitely workable. One of my sons even bought a Bullet for his wife last year, after enjoying my "uncooking".

Mikfizzle . . . Yeah! Your first recipe posting, and it sounds delicious. I think I'll whip some up to go with my squash and zucchini salad for lunch. I'll probably add a little fresh chive, and will have to substitute cilantro, as I haven't planted oregano in the herb garden yet. (Note to self . . . Go to Greenhouse and buy oregano plant.)
One of the categories people use a lot when searching for quick recipes is "easy". You might want to add that tag to your recipe. I'm looking forward to more simple "Mikfizzle" recipes that don't require fancy equipment. The Magic Bullet is pretty amazing when preparing small portions.
