Ingredients
1 fresh corn (cut from the cob)
1 avocado (diced)
1 tomato (diced)
2 small limes (juiced)
1 small zucchini (diced)
1 tablespoon olive oil
Hot red pepper (as much as you like it spicy)
Sea salt and fresh pepper
1 teaspoon miso
2 tablespoons coriander (minced)
Recipe Directions
1. Put all the ingredients but the miso in a bowl.
2. Keep the miso in a teaspoon that you will hold on top of your mix.
3. Warm some water and pour it in the bowl to fill it right on top of the teaspoon. I don’t want the whole miso to mix with the soup as the main ingredient is the lime so this way, you make sure to just have a light miso taste.

By yramessOne of my favorite Mexican soups back when i was on a SAD diet was a shrimp/potato/lime mix!
I was craving it today so I decided to make a raw version.
Instead of the potatoes, I used a zucchini as it almost feels the same.
As for the chicken broth, I replaced it with miso.
Sorry for the bad quality picture, I only had my cellphone around!

super sorry.. but i'm confused about the miso instructions. i know i probably sound dumb... so, i put the miso in the teaspoon... hold it on TOP of the veggie mix.. and then pour the water in the bowl just to barely cover the miso-filled teaspoon? but i dont stir the spoon to mix the miso? i just let it sit there? oorrr... sorry. confusing myself further. eek, sorry, i just really like the sound of this recipe n wanna make sure i get the miso part right. lol dang iiiit i feel silly......=/

spirit, instead of the pepper, i'd put parsley so it has a nice herb
taste with the coriander!

spirit, instead of the pepper, i'd put parsley so it has a nice herb

haha no i guess i wasn't clear!
you need to pour enough water to fill the bowl, but while pouring it,
i like to put my miso teaspoon in the way so when the water gets in the bowl,
it got a slight miso taste on the way.
if that still sounds confusing, just put half a 1/3 teaspoon of miso with all the ingredient and water and mix it! :)
