Yields about 1 1/2 Cups
Ingredients
2 tomatoes
¼ cup olive oil
2 tablespoon apple cider vinegar
2 cloves garlic
1 teaspoon celtic salt
1 teaspoon fresh cracked pepper
1 teaspoon paprika, ideally Hungarian paprika
Recipe Directions
Put all ingredients, except olive oil, into a blender or food processor and blend until mixed. While blender/processor is still running slowly pour in the olive oil and blend until mixture is creamy. Store in refrigerator. Keeps about 5 days. Shake or stir well before serving.

By NyusziI wanted something different on my greens and this did the trick. It is so flavorful with a slightly spicy kick, because of the garlic and cracked pepper. It smells so fresh and is reminiscent of thousand island dressing.

Hi everyone! Pianissima, that is exactly what inspired me to create this dressing, the thin slices of kale that were sitting in a bowl looking awfully plain. It taste fantastic over kale. If you'd like you can see it [the salad] at my web blog. Next time I will try it as a dip with fresh veggies. If any of you decide to give it a whirl, let me know how it turned out for you and if you like it. Thanks.

I also found out that Russian dressing tastes just like French and Thousand Island dressing. Also, French and thousand Island recipes seem to include mustard so I'll try adding that, too.

Delicious! I made it as written and it was absolutely perfect!! I will defnintely make again and often. It was a little spicy but I like it that way... maybe it was the pepper I used? Anyway, LOVED IT!

I accidently put too much salt in it and had to stretch it with a whole avocado, some water and more olive oil....and its sooo creamy and fluffy..unbelievable good. Thanks

I made this last night, I have never prepared raw food before. I served it over a big salad of mixed greens, purple cabbage and snap peas and it was delicious. I am eating some of the leftovers today as a dip.

This recipe is simply wonderful. Last batch I sub'd chili powder for the paprika, and added 2-3 Tbl of tahini. In fact, it is so good, after it was fresh made, I ate several spoonfuls of it like soup. yum I thoroughly enjoyed it on a sprout/cuke/tomato salad today.

This is one of my favs, along with renee underkoffler's herbed vinaigrette. I use 1 reg. tomato and some soaked sundried tomatoes. I also add fresh basil, which changes the beautiful red color a bit. If you don't want to change the color any, add chopped basil at the end and don't blend it in. i love this.

Hi kmqq, it's my pleasure to share this and other recipes. Congratulation on you and your hubby transitioning to raw! I've been very high raw [about 95% raw] for 1 year now. I'm so glad you enjoy the dressing. I've made it so many times now. This dressing goes quickly, and both my husband and Mom [who are not raw] love it.

Thank You, Nyuszi! I'm just transitioning from vegan to raw vegan this week. My husband is a non-vegan but eats most of what I do. When he told a friend that his raw food recipes sounded "Fabulous", I knew it was time to transition 'us'. This was the first recipe I made - 2 days ago. I used a very large roma tomato, omitted the olive oil and added 1/2 TBS tahini and 1 Tbs water. Put it over raw spinach, mango, and sunflower seed salad. We both LOVED it! Last night I made it again, this time I just set out cut up raw carrot, celery, cucumber, and spinach leaves and used it as a dip - WONDERFUL! Thank you SOOOOO much!

Hi Yuna, certainly you could sub lemon juice for acv. In my opinion the dressing tastes much different than a take on thousand island dressing but it's all subjective. :-) Onions and/or sun-dried tomatoes would be good and adding either or both would alter the taste a bit but I can't comment on this accurately because I haven't tested it. I'm curious to know how it turns out so let me know. I'll be making this dressing [among other goodies] this weekend for a potluck.

i can also use lemon juice instead of apple cider vinegar right? I just found out that Thousand Island dressing tastes just like French dressing! I have been looking for a raw french dressing recipe for so long! I went to a restaurant and tried the thousand island dressing since they didn't have french and it tasted exactly the same. I thought it was french but it was a lighter color and it had specks of food in it. I'm so glad to now know this and I'm definitely going to try this recipe soon and then comment. :)

How would adding onions change this recipe? And has anyone tried it with sundried tomatoes instead of fresh tomatoes? Would it make a difference? Thanks! :)

I thought this might be similar to picante sauce, which I use as salad dressing from time to time. This is a beautiful color and welcome texture! I'm looking forward to trying it.
