Ingredients
2 large tomatoes
1 stalk celery (optional; makes it a little saltier)
1 Champagne or Ataulfo mango
Handful of fresh cilantro (or more to taste)
1 large zucchini or 2 small zucchinis (spiralized or sliced into noodles)
Recipe Directions
1. Place zucchini noodles in a bowl.
2. Blend tomatoes and celery in blender or food processor until smooth.
3. Add cilantro and mango to blender and pulse until almost smooth. I like it a little chunky.
4. Pour sauce over noodles.
5. Garnish with other vegetables and greens.

joanna - I've had the same thing happen to me. However, when it's congealed the next day I just stir it up or put it back in the blender and it goes back to it's original consistency.

Tried it just now. Even though mangoes arent in season yet, i had to try and it was good. Didnt have cilantro, so i put some fresh basil in and it made it fresh :) Thanx!

Tomato Mango Zucchetti Sauce
yes, I found this recipe on your blogspot blog and it's pretty awesome. I don't use the celery, because I find that when I blend celery up into things like that it just way overpowers all the other flavors. I would maybe try dicing up some celery and adding the pieces to the sauce of tomato and mango and cilantro.
But it's great without celery too! I really really enjoyed it bottom line, thanks for the recipe!

i've made this before and it's all right. i noticed that it makes a ton of sauce and when i wanted it the next day, the sauce was all congealed.

I just ate it and I loved it!! I didn't used the celery because yesterday I ate the last stalks, but sure I'll be doing this often.
