Crust ingredients:
- 1 cup cashews
- 1 cup dried, unsweetened coconut
- 1/2 cup dates
- 1/4 teaspoon sea salt
Banana filling:
- 2 medium bananas
- 3/4 cup cashews
- 1/4 cup honey
- 1/4 cup lemon juice
- 1/3 cup coconut oil
- 1 teaspoon vanilla
- 1/8 teaspoon sea salt
Recipe Directions
- 1. Place all crust ingredients in the food processor. Process until the mixture sticks together and the dates are well processed.
- 2. Dump crust mixture into your pie crust/glass dish. Press the crust down firmly in your dish with your hands. (Crust is now done.)
- 3. Add all banana filling ingredients to your blender. Blend until creamy and smooth.
- 4. Pour banana cream filling onto the crust. Smooth out with the back of a spoon.
- 5. Cover and throw in freezer. Ideally should be frozen overnight to firm up so that it can be sliced perfectly.
- 6. This raw banana cream pie recipe should always be kept in the freezer. (It'll get soggy if in the fridge.)

By The RawtarianI was inspired to create this raw banana cream pie recipe for Christmas this year. It is soo smooth, so "banana creamy" and just absolutely perfect. (Can you tell I am on a freezer pie kick??)
It's actually pretty fast to make - just a quick food process and an easy blend. Even a crappy blender should be able to handle this raw recipe.
Using perfectly ripe bananas will give you that divine banana cream pie taste. (You want to use perfectly ripe bananas - not too green and not too brown.)
If you don't do honey you can do agave nectar or maple syrup instead of the honey. Use the same measurements.

This is a great way to use up bananas so different I like it - will it be OK in the freezer for more than a week? There is only 1 of me...and I can't eat the whole thing in a week!!

Hi CR! no - meal tends to be less fatty. So don't do that because the texture will change. Use whole or split cashews :)

Does the coconut oil need to be melted or is it okay to blend it in its solid form? I'm a little unsure about that bit.
Otherwise, this sounds absolutely amazing!!! :D

It's fine in its solid state, since it will warm up and liquify during the blending process. Don't bother melting it.

Hi Barbara, As a Type 1 Diabetic, I am not sure if you are okay to use these sweeteners, but I will give you some options to choose from: You could use honey, maple syrup, agave nectar, some stevia drops or powder, or you could use dates instead.
Generally, I think the best sweetener for you might be low glycemic, like stevia? Check that out if you haven't already. I prefer the liquid drops (easier to use). It's crazy sweet, so you will only need a few drops - like 5-7. Taste test!

Thanks so much for your reply. Sweeteners are fine, I just wasn,t sure if the honey was a consistency thing. But if it is just being used as a sweetening agent I can use my sugarless sweetener :-)

Oh my god! This pie is divine!
I added pure maple instead of honey, and 2/3 pecans to the base instead of all cashew.
And wow, so delicious. My husband who is a cheesecake lover and not big on health food also found this delicious.

Is there anything I can use in place of the dates? I want to try this recipe for Easter this weekend but my family isn't much for healthy and even I don't care for the taste of dates too much.

I promise, you cannot even taste the dates in this recipe.
You know how traditional cakes contain eggs? But they don't taste like eggs? Same kinda thing :) the dates just are used for sweetness and stickiness. Trust me :)
