Ingredients
- 1 cup dates
- 1/4 cup raw cacao (cocoa) powder
- 1/4 cup coconut oil
- 3/4 cup water (or a tiny bit more if needed - but try to stick to this amount)
Recipe Directions
- 1. Place all ingredients in a high-speed blender. If possible, let them sit in there for a few minutes to soften the dates a little bit.
- 2. Blend all ingredients in your high-speed blender. The ingredients can be a little finicky to blend, so start at a slow speed and increase speed slowly.
- 3. Keep blending for a very long time to get a velvety consistency. This is one of those recipes that really makes use of the power of a high-speed blender. If you feel that the blades are just spinning but aren't actually moving all of the icing around, turn the blender off and make an air pocket down the side of the blender with a spatula to expose the blades. Remove the spatula, replace the lid, and start blending slowly again.
- 4. You'll know it's ready if there are no bits of dates and all you can taste is velvety chocolate goodness.
- 5. This raw chocolate icing is ready to use as soon as you pour it out of the blender.

By The RawtarianRaw chocolate icing... I am having difficulty understanding how the combination of four basic ingredients could taste so divine.
I mean, this raw chocolate icing only contains dates, cacao, coconut oil and water. Sounds boring, right? It must just taste like pasty dates, right?
Wrong! This tastes like raw chocolate icing that you'd get at some high-brow raw vegan restaurant. It has a smooth, chocolatey, velvety texture and sweet, chocolatey mousse-like taste. Plus, it's really easy to work with and spread.
I was inspired to whip up a batch of raw chocolate icing to go on top of my raw brownies. Yeah, the combination of those raw brownies and this icing is pretty much heavenly. This raw chocolate icing has a very handy consistency--it's a lot like mousse when kept in the fridge.
It's a great raw vegan icing for cakes, brownies and the like! Iced cakes or brownies should be kept in the refrigerator.
This raw chocolate icing could also double as a raw pudding if you were feeling sad and needed to eat some chocolate out of a bowl with a spoon to make yourself feel better. :)

Raw chocolate icing
This is legitimately the best chocolate icing I have ever had. I make it all the time and I prefer it to regular icing. In the Vitamix it mixes so creamy and smooth I would never in 1 million years imagine it was date-based.. Before this I didn't even like dates. I love the brownies too but I often make just the icing for a quick sugar fix and eat it like pudding.

How long do you blend in the Vitamix? How often do you scrape down? I can’t seem to blend for more than 5 seconds before it all splats up the sides even at a low speed of 1 - 2. I’ve been at it for over 20 minutes and it is sill so bitty and I’ve lost half the icing to the top of it. Please send help!!!

I have never heard of including date pits in any blended or food processed recipe.

Correct! If your dates have pits, they should be removed before making this recipe.

Raw chocolate icing
Super easy and delicious. Unbelievable texture, taste and sweetness bearing in mind the ingtedients. Love it! I made it in a nutribullet and it worked a treat. The finished product tastes of coconut which I like however this is worth bearing in mind if you don't like the taste of coconut.

Hi Erica! This has more to do with your blender quality than anything. The best thing to do would be to invest in a better blender. Someday! Something to ask Santa for ;)

Carrot cake + chocolate icing just doesn't work.
I love carrot cake and I love choco (obviously!) but it seriously won't taste good together. Trust moi!

The Brazilians actually have a carrot cake they make with chocolate icing called Bolo de Cenoura but their carrot cake is process the carrot and usually all the other ingredients in the food processor which gives it a beautiful orange color. Much different to the American carrot cake.

Great recipe and really simple and yummy. My only concern is about the amount of coconut oil used. I have in the past overdone it and have made myself sick from eating porridge with a tablespoon of coconut oil in it. I'm nervous about offering second helpings in case it makes someone not used to coconut oil as sick as I was. Do you have any thoughts on this?

Wow this recipe is great. Question though. This is my first ever experience with dates. As I turned on my Vitamix I hear what sounds like screws being chopped, so I turned it off reach inside top discover really really hard seeds. I picked a few out but it was already to late so I proceeded with blending. The icing is so creamy and smooth. To appease my sugar loving husband I squirted in some of our own fresh honey. Talk about dreamy. Oh back to the ?, was I supposed to deseed the dates?

Lol, Tasha, I'm glad you and your husband loved the icing. I don't de-seed the dates - that would be a job! Try a different type of dates, maybe? Also, when you add all your ingredients to the blender, let them sit and soften for a bit.
