  • 1. Throw all ingredients (except last 1/2 cup of red peppers) in a high-speed blender and blend up 'til nice and smooth and well mixed. You can let this raw red bell pepper soup recipe blend in the Vitamix or Blendtec blender for a little extra time so that the heat of the blades and the friction actually warm up this delicious, creamy raw red bell pepper soup recipe.
  • 2. Transfer raw red pepper soup to a bowl. Add the remaining 1/2 cup of diced red peppers and mix gently with a spoon.
  • 3. Garnish with whatever you like! I simply sprinkled my soup with some dried basil. Eat immediately.

Big thanks to Julie K and her comment on my raw tomato soup recipe for inspiring me to modify one of my existing raw soup recipes to come up with this super creamy raw red bell pepper soup! This recipe is super simple and requires only a blender to make.

It's also very quick to pull together if you have two red peppers in the fridge, as well as some cashews in the cupboard.

By the way, red bell peppers are sweet. So do not use green bell peppers for this recipe since they aren't sweet enough!

This raw red pepper soup recipe makes a nice big bowl for one person. :)

It takes approx. 1 medium red bell pepper to make 1 cup roughly chopped red bell peppers.

Hi there, I've been toying with the idea of going doing a 30 day raw challenge for myself (to be fair, my 30 day vegetarian challenge converted me full time veg a year ago), and was doing my research. I came across your page, and am considerably more excited about going raw now! Everything looks and sounds delicious and easy...and that there's a raw ranch dressing makes it that much easier (as does your app).

Thank you for this delicious recipe! It's like a creamy gourmet soup with cream - but there is no cream! Perfect blend of flavors. I was raving to my husband about it and he was so happy for me. He knows how hard it is to go raw - he says he would never do it. Thanks again and also for your lovely website!

I want to double this recipe but don't have enough cashews even for the regular size can I substitute most of the cashews with a different nut? I have macadamia, peanuts, sunflower seeds, almonds as well as other seeds. Thank you

Hi Laura Jane. I tried to make this from memory and I mistakenly put in too many cashews. So after verifying your recipe, I added more water (¾ cup cashews and just over 1 cup of water). I only had 2 peppers so I used them both. I added a clove of garlic, a bit of hot sauce, and some pepper along with the salt.

I thought it tasted really nice, but I didn't like too much the diced peppers in the soup, and so I ended up blending them all in. Overall, it was smooth and very tasty. I really enjoyed it. Thanks :)
