Ingredients
3 cups shiitake mushrooms
1 tablespoon olive oil
3 tablespoons soy sauce or applicable substitute
Salt
Pepper
1 cup nuts (soaked)
2 stalks of celery
2 cloves garlic
Handful of parsley
¼ cup lemon juice
water
Recipe Directions
1. I had dehydrated shiitakes. I soaked them in water to soften them. If you have fresh, then you get to skip this step! :)
2. Add mushrooms, olive oil, soy sauce (or applicable substitute), salt, and pepper to a bowl. Mix to coat. Allow to marinate for several hours.
3. Add mushrooms [with about half a cup reserved for garnish] and rest of ingredients to the blender. Add water a little at a time to get mixture going and reach your preferred texture.
4. Chop reserved mushrooms. Ladle soup into a bowl. Garnish with topped mushrooms.

Mon46, try some sunflower seeds or pumpkin seeds (latter might give a stronger taste), it should work fine or just leave out the nuts, you get a thinner soup and you may need to add more spices. The key to any mushroom dishes in my opinion is the ample use of freshly ground pepper.
