Recipe Directions

1. Put the carrots in the food processor and process until they are very fine and so juicy that if you squeeze a handful the juice will run out. Take the carrots out of the processor and put in a bowl.

2. Drain the water from the hazlenuts and put them in food processor. Blend the hazlenuts until very fine. Remove from processor and add to the carrots.

3. Chop the celery, parsley, and onion by hand and add it to the carrot and nut mixture.

4. Add the lemon juice, dill, kelp and dulse to the mixture and toss by hand.

5. After combining, put on a decorative plate and form into a fish or oval shape. Decorate with parsley, dill, onions, and minced red pepper.

Wow, I just had this for dinner and it was delicious.

It is tasty but a little hazzlenutty on its own, but I had it in a salad and it was SO good.

I tossed several spoonfuls of this stuff with a chopped tomato and a vinaigrette with a bunch of mixed greens and it was super satisfying. The best salad I've had in months.

Oh, I was just wondering wether it is dried parsley or fresh?

I know you say dried in the ingredient list, but then you say to chop the parsley which kind of confused me.

Also, I used both dried parsley and dill, but think it would be even better with fresh.

I'm going to try it with fresh next time.

This should work with leftover pulp (carrot), so i'll give it a try, but without the Kelp powder. Can't stand the smell. I have dulse and a mixture of 3 sea veggies, so i'll use those instead of the kelp. Interesting using the Hazelnuts!
