Ingredients
1 cup leftover veggie pulp
½ cup flax (I did half seeds, half ground meal)
seasonings, salt
½ cup buckwheat groats
Recipe Directions
I had pulp from juice I made with spinach, carrot, asparagus and apple. I used the blender/milk bag method. I then soaked a 1/2 cup of buckwheat groats as well as a 1/2 cup of flax (half seeds, half ground meal) in enough water to cover for about a half hour. Drain off any excess water. Grind the soaked mush into a dough (I used my wimpy food processor). This will act as a binder for the crackers. Mix in with the veggie pulp along a good amount of salt, dried rosemary, good dash of cayenne pepper, paprika etc. I don’t have a dehydrator yet, so I either use my radiator (which is now off!), the sun, or the oven on the lowest setting (or just the light switched on). If you use your oven, just make sure you either turn on the fan or leave it slightly ajar, otherwise it’s get too moist and will never dry out. Line your oven tray with wax/baking paper, then spread as thinly as you can. I did this in my oven on the lowest setting and it took about 6 hours, but it depends on the method you use, so check it often. It should be crisp. You can use all kinds of seasonings to get the flavor you want and can sprinkle on sunflower seeds or whatever. I’m sure you can use all kinds of veggie pulp, just make sure it’s not too sweet – but maybe you can make sweet crackers with fruit pulp! Gotta try it!!

I actually just did this as well with my pulp - but i didn't add anything but some seasonings and some onion. Really, really tasty! I usually use kale, carrot, beet and cucumber. All the other veggies are too precious for me to juice :) Oh, i used Spike seasoning and added a little Adzuki Bean Miso to it for flavoring.
