Recipe Directions

BASE

1. Blend the cashews, almonds, walnuts, sunflower seeds, and flax seeds in the blender or food processor, if you have one.

2. Once it is a very fine consistency, transfer to a large mixing bowl.

3. Add 1/2 teaspoon of vanilla extract and 2 teaspoons of agave. This will hold the base of the bar together.

4. Press evenly in the bottom of a pan.

LEMON TOPPING

5. Combine in the blender diced mangoes, zest and juice of 2 lemons, along with 1/4 cup of agave.

6. Remove from blender, and add shredded coconut, 1/2 teaspoon of vanilla extract, and warmed coconut oil.

7. Mix together and spread evenly over base mixture in pan. Freeze and enjoy!

You can use whatever nuts you like as the base, this is just what I had on hand. For the lemon topping, I wanted it quite tart since the base was in the sweeter side, if you want a sweeter topping, add more agave or honey.

Hi, I just made it today... and the filling turned out with the consistency if a very liquidy smoothie. I froze it and it's kinda like a sorbet type of cake now! Is that how this is supposed to be? I thought it's a snack "bar"? Sorry I'm just confused. thanks in advance!

Britzer, you can add flax powder to thicken them and put them in the fridge instead.
