  • 1. Place all mashed potato ingredients into a food processor.
  • 2. Process until creamy and smooth, similar in texture to the attached pictures. (Although you may be tempted to do so, do not add any additional liquid other than the 2 tablespoons of water. Also, if it seems difficult to process at the beginning, you may need to stop and scrape the sides a few times to help get it started.)
  • 3. Enjoy your raw mashed potatoes!

A dollop of raw mashed "potatoes" on your plate turns an everyday meal into a festive feast!  And, yes, that's cauliflower masquerading as potatoes since eating raw potatoes is a no-no. :)

This is a simple cauliflower-based mashed potato recipe that adds a nice heartiness to a fresh meal.

Use these raw mashed 'taters as part of a holiday feast or just treat yourself with a nice hearty serving of mashed potatoes for a fun weeknight dinner. I recently enjoyed these mashed cauliflower-based "potatoes" with a large green salad and traditional style corn (just chop some raw corn off a cob and you've got a side-serving of corn)--served all on one plate I felt like I was at Grandma's -- raw style of course!

This is absolutely AMAZING! I read the reviews prior to making it and was a bit afraid that it wouldn't be so good due to a few strong dislikes, but... Omg, I'm glad I heard my heart and went on with it. It's just heavenly! It became one my fav recipes for a side dish! I eat it with a iceberg lettuce & sprouts salad, tomatoes, onions and chopped dried cranberries... Served with native olive oil & creamy balsamic... Thank you so much!
I think that maybe the quality of the cauliflower can influence a lot. I bought an organic cauliflower (quite a big one) and the flavour was really mild,whereas in the past I have bought cauliflowers with a stronger taste. Perhaps adding more cashews and some kohlrabi could milder it up if one has a stronger tasting cauliflower!

In my neck of the woods (Victoria, BC) we have a little shop where you can buy wee amounts of flavour infused olive oil and balsamic. I had the "potatoes" with a wild mushroom & sage oil and fig balsamic vinegar. I just about fell over - so yummy! Thanks for the olive oil suggestion

Jeannine, That sounds like a great idea! My friend and I added black pepper when we made ours, but I'm gonna try some fancy oil and vinegar next time. Sadly, my local shop doesn't have the option to buy wee amounts -- just big, expensive bottles, but they're worth it.

I was so impressed with the texture of the cauliflower. It looked to me like it'd be gritty or something when we'd processed them, but to my delight they were soft and fluffy like mashed "potatoes" should be!

I agree. One clove of fresh garlic did ruin the taste at all. I could use one tspoon of garlic powder instead. And the texture for me it was horrible. Not creamy at all, and I blended for a long time. With vitamix (that I don't have) should be creamy for real. 2/5

Hi Jack, The idea here is not to use a blender, but to use a food processor :) That'll give you the texture you're looking for.

I followed the directions and ended up with horrible tasting paste. Maybe texture is similar to mashed potatoes, but there was a strong raw cauliflower taste!
Used it as compost for my organic garden.

Hi Marianna,

It sounds like a few of you have really disliked this recipe. I have made it a few times and I like the flavor! So not sure what to say about that. But also, you definitely need to eat it *with* something else - it compliments other flavors. It's not really something that you'd want to make an entire meal out of and eat the whole thing with a spoon.

For example, I've eaten a dollop of raw mashed potatoes with fresh corn chopped off the cop and raw cranberry relish. Yum!

I generally like raw cauliflower and I have liked most of the other recipes I have tried on your site, but something was just very wrong about the flavor of this dish. My wife and I both tried it 2 different times and no matter whether as the original recipe or with nutritional yeast added or other spices, it was just not right. Something about the combination of these flavors didn't sit right with either of us. I certainly appreciate the creativity and we were really hoping for another winning recipe, but this one wasn't it.

Why are raw potatoes a no-no? Should you not juice raw potatoes, or raw sweet potatoes for that matter?
