Ingredients
- 3 cups cauliflower (chopped)
- 1 cup cashews
- 1 clove garlic
- 2 tablespoons water
- 1/2 teaspoon sea salt
Recipe Directions
- 1. Place all mashed potato ingredients into a food processor.
- 2. Process until creamy and smooth, similar in texture to the attached pictures. (Although you may be tempted to do so, do not add any additional liquid other than the 2 tablespoons of water. Also, if it seems difficult to process at the beginning, you may need to stop and scrape the sides a few times to help get it started.)
- 3. Enjoy your raw mashed potatoes!

This is a simple cauliflower-based mashed potato recipe that adds a nice heartiness to a fresh meal.
Use these raw mashed 'taters as part of a holiday feast or just treat yourself with a nice hearty serving of mashed potatoes for a fun weeknight dinner. I recently enjoyed these mashed cauliflower-based "potatoes" with a large green salad and traditional style corn (just chop some raw corn off a cob and you've got a side-serving of corn)--served all on one plate I felt like I was at Grandma's -- raw style of course!

Hi Beth,
Correct - raw potatoes are a no-no (alkaloids, etc) - do not juice either. Plus, the taste is starchy and unappealing :)

I love your website already. I've made cauliflower mashed potatoes before, but not completely raw. I was looking to add a few raw dished to our meal plan and you make it look tasty and simple.

I was wondering the same thing! I wanted to give them a little bit of a cheesy flavor, and thought that might work well with the cashews to do so!

Raw mashed potatoes recipe
I thought it was a great potato substitute. I used garlic powder instead of fresh garlic because I wanted a lighter garlic taste. My husband loved it.

This was delish!!! Love the garlic flavour! The cashews also added an interesting texture. :) I mixed it with a green salad and it was yum!

I like it a lot too, Sylvea. Add a side of sliced corn (straight off a raw cob) along with the green salad and it's an awesome meal.

My kids didn't like the garlic taste but I loved this recipe. I made a lot just wondering how long this will keep in the fridge?

It keeps really well in the fridge, perhaps 2-3 days, but it keeps really well and tastes very similar the next day.
Next time you can make it without the garlic if you like.
