Raw yogurt recipe
This cashew-based raw yogurt recipe is definitely more of a yogurt than an icing or a frosting. It will not get very solid in the fridge. It will firm up somewhat during the 2 hour refrigeration, but it will never be stiff or solid. Its texture is, well, like yogurt!

Ingredients
- 1 cup cashews
- 1/2 cup water
- 3 tablespoons shredded coconut
- 1/8 cup honey
- 1 tablespoon lemon juice
- 1 tablespoon pure vanilla extract
- 1 pinch sea salt
- 1/3 cup coconut oil
Recipe Directions
- 1. Place all ingredients into blender. Blend until it reaches a thin yogurt-style consistency. There should be absolutely no grittiness or chunks of anything left.
- 2. Transfer into a bowl and refrigerate for at least 2 hours.
- 3. You now have raw yogurt!

Enjoy as a yogurt, as seen in this picture with morning fruit toppings. Add crumbled walnuts and dates for an even nicer breakfast experience, similar to granola and yogurt.

Hello, I find this recipe so delicious I serve at as a dessert, calling it a 'cashew coconut cream' :-) Even my husband - who is not into sweet food at all - likes it. I can tell you that's a compliment!

Yogurt, YEA!!!! Is the coconut essential to the recipe? I'm not very fond of coconut and would like to try without, but hate to waste my food.

Hi Dana,
Well, it will be thicker/more solid with the coconut oil - without it, it will be runnier, but it will still be okay

Raw yogurt recipe
This recipe is so delicious! The texture is very smooth and light, and it tastes great with strawberries and blueberries. I cannot wait to try with other fruits, such as pineapple, oranges, blackberries, etc. Superb!
