Raw yogurt recipe
This cashew-based raw yogurt recipe is definitely more of a yogurt than an icing or a frosting. It will not get very solid in the fridge. It will firm up somewhat during the 2 hour refrigeration, but it will never be stiff or solid. Its texture is, well, like yogurt!

Ingredients
- 1 cup cashews
- 1/2 cup water
- 3 tablespoons shredded coconut
- 1/8 cup honey
- 1 tablespoon lemon juice
- 1 tablespoon pure vanilla extract
- 1 pinch sea salt
- 1/3 cup coconut oil
Recipe Directions
- 1. Place all ingredients into blender. Blend until it reaches a thin yogurt-style consistency. There should be absolutely no grittiness or chunks of anything left.
- 2. Transfer into a bowl and refrigerate for at least 2 hours.
- 3. You now have raw yogurt!

Enjoy as a yogurt, as seen in this picture with morning fruit toppings. Add crumbled walnuts and dates for an even nicer breakfast experience, similar to granola and yogurt.

Hello Rawtarian, I followed your instructions to the letter but the end result was hard to stir after storing it in the fridge. I'm guessing because of the coconut oil I used since it was chunky. Any suggestions? Thanks

Would this recipe culture effectively if a probiotic powder was added? Thus creating true yogurt?

If one is having yogurt for the good gut bacteria then this recipe would not accomplish that without adding probiotics - but then you Wud not go to any trouble if you could just add the processed powder or drops cause you could add that to anything raw. So my suggestion is we change the name cause this is a yummy drink/sauce/ dip! And we then have it because we like it and not for the accepted value of yogurt! Am I being pedantic? Probably ! What could we call it?

I think it is widely accepted now that we do not harvest pro biotics from yogurt as stomach acid kills most of them and the probiotics used in yogurt production are not human beneficial anyway.
So enjoy this yogurt - more nutritional than real yogurt. I take a very good probiotic supplement.

Hi Barbara!
I understand where you're coming from, but you've gotta admit that it has the texture of yogurt, and it would be hard to know what to expect from "raw sweet cashew sauce" - using the title raw yogurt at least gives the visitor a sense of what to expect and how to use it, since most people have a frame of reference for yogurt :)
I do hear where you're coming from though, I have gotten lots of similar comments lately about my recipes for cheese haha

Hi Celmah! dessicated coconut just means dried coconut... so they are not really the same per se from a grammatical point of view.
BUT generally as long as you are using dried/dessicated coconut that should be fine! It doesn't really have to be shredded

I was wondering why you don't germinate the raw nuts before using in any of your recipes. is this assumed?

Re: nut soaking, I am not much of a soaker since it can be so time-consuming. In general, with my recipes, soaking is not required unless it is explicitly stated (as you know)--and when it is it is usually for texture. That being said, the general idea behind soaking of nuts is to two-fold: (1) easier to digest when presoaked and moist; (2) removal of enzyme inhibitors.
So… soaking is a good thing, similar to buying 100% organic produce. But sometimes it's not feasible/realistic to do either. But ideal to do both - for sure.
Also, I don't like for people to get too caught up with doing everything "perfectly" because it can cause overwhelm and eventually falling off the wagon.
Therefore, I recommend not soaking unless it's specifically stated :)

I'm not sure why I keep thinking I'll get a different result when I try to make anything with only cashews. I even added almond extract to see if I could get a different result. =) I apparently must not like the taste of them raw. I like them when I do them 1/2 and 1/2 with something. I do however like them when I make a cheesy sauce for my kale chips, but anything Vanilla. Bleh. I think I will try and do something ice creamy with what I made. Use coconut milk, cherries, and almond extract...we'll see what happens.

Joelle, sometimes you have to experiment a little to find what rocks your boat(and what doesn't!). Your ice cream idea does sound good, though!

The ice cream turned out fabulous!! I just put the yogurt in the fridge over night, and then the next day put it in the food processor with the listed goodies, and some chocolate chips, and I got to taste some but let it freeze over night and let the flavors meld and got a thumbs up from every one! I have thought about trying some organic raw cashews to see if I get a better taste, but I haven't been able to bring myself to splurge on them yet. =)

Raw yogurt recipe
This is really good. I left mine a little over two hours in the fridge and it was much thicker than yogurt. So I added a little water and everything was perfect.
