This salad is a staple at our house. You’ll find it’s really easy to “tweak” with ingredients that you have on hand.

Recipe Directions

1. Prepare sunflower seeds ahead of time.

2. Make almond mayonnaise. 

3. Place ingredients in bowl, mix well and enjoy! Just add enough of the almond mayonnaise to hold it together, you be the judge….You may want to add a little vinegar for more zip. We’ve also added minced red onion…. We eat this plain, on top of greens, as a tortilla filling, such possibilities!!

I made this with a dressing of mashed avocado and orange juice instead of the almond Mayo and it was equally delish

I forgot to mention that you could add lemon juice instead of vinegar if you wanted!
