Yield
Makes about 8 cups.
Ingredients
6 broccoli stalks (made into shoestrings)
1 cup broccoli florets
¼ cup carrots (grated)
.125 cup red cabbage (shredded)
.125 cup sunflower seeds (soaked overnight, then dehydrated 4 hours)
¼ cup dried cranberries or similar
1 cup almond mayonnaise
1 tablespoon sweetener
1 sprinkle sea salt (optional)
Recipe Directions
1. Prepare sunflower seeds ahead of time.
2. Make almond mayonnaise.
3. Place ingredients in bowl, mix well and enjoy! Just add enough of the almond mayonnaise to hold it together, you be the judge….You may want to add a little vinegar for more zip. We’ve also added minced red onion…. We eat this plain, on top of greens, as a tortilla filling, such possibilities!!

I made this with a dressing of mashed avocado and orange juice instead of the almond Mayo and it was equally delish

I forgot to mention that you could add lemon juice instead of vinegar if you wanted!
