Ingredients
12 Plum Tomatoes, chopped
1 tablespoon garlic, minced
2 tablespoon shallots, minced
1 cup fresh basil leaves, chopped
1 teaspoon fresh lemon juice
salt to taste
fresh ground pepper to taste
.33 cup extra virgin olive oil
Recipe Directions
In a large bowl, toss together the plum tomatoes, minced garlic, shallots, basil, lemon juice, salt, pepper and olive oil. This is great when you first make it but so much better after it has been in the fridge over night. If serving with Flax Crackers, I recommend small cups with spoons so that people can spoon the mixture onto the crackers to eat, as the crackers I make are very thin and break easily when dipping.
