Ingredients
Salad
2 medium-large carrots
1/2 cucumber
Spicy peanut dressing
1/4c peanut butter (or almond butter if you prefer)
1.5 tbsp tamari (or nama shoyu to be truly raw - I'm just scared of the high sodium content. If you use braggs, use a bit less - to taste)
1 tbsp sesame oil
1 tbsp lime juice
cayenne pepper or chili pepper, finely minced and seeded to taste
1/4c water (start with 1/8c and add more as needed)
Add a bit more water as needed to get the right consistency
Recipe Directions
Using a veggie peeler, peel thin strips of the cucumber and carrots. You may want to chop the veggies in half first so your pieces aren't too big.
But into a bowl and toss with the dressing until well coated. Top with hemp seeds or sesame seeds.
Note: because of the water in the cucumber, if this salad is saved for the next day or two, it can get watery. So, store the salad separate from the dressing and when you want to eat it, take some and put in a bowl and dress.

I just made this with the addition of some bell pepper and olives in the salad, and some ume plum vinegar and ground ginger in the sauce. Great salad, thanks!

I added a little agave to the dressing, but otherwise followed the recipe exactly. So so good! I can't imagine this being enough for 4 servings; I'm eating it all myself!

Cucumber and vinegar is classic. This is a beautiful salad. enthusiastic about this distinctive cooking method That he's featured it in His Book Open Kitchen: A Chef's Day scraps at Bay Fortune (Callawind Publications, 1998). The spicy vegetables Perfectly underscore The Rich Texture of The Salmon.

Thanks for the recipe. I always meet spring with green salads. I just put everything fresh and green that I have and usually have a very nice salad. I think that dressing means a lot for a salad. I've found a book about different dressings from shared files SE http://filecraft.com . It is described there what comes with what. To tell the truth, the same ingridients but different dressing make the taste completely new.

I made this exactly as written and took it to a potluck. Everybody loved it, except those who didn't like the heat from the fresh red chile pepper I put in (tastes better than cayenne). I thought it was delicious and came home from the potluck and immediately made another batch of the peanut sauce. I think I will add a little fresh ginger to this next batch, and use almond butter instead so it is really raw (except for the nama shoyu). I think you could shred or spiralize the veggies, the peeling is so tedious, but I did do it the first time. Altogether an excellent salad.

I decided to make a half-recipe of this for lunch, and it's delicious :) I'm serving it with some marinated mushrooms and a sliced avocado.
I think next time, I'll make my peanut dressing in the blender, that way it's more emulsified....I had trouble whisking the PB and water together by hand, and ended up with sort of a chunky dressing where the water oozed out of the salad....It tastes a lot better than it looks, haha. I think using the blender next time will fix the aesthetic issue.

depends on the almond butter. you can buy raw almond butter, but would be cheaper to make it. Although, you need to buy raw almonds online since those sold in stores are pasteurized. Same with peanuts though!
