Ingredients
1 cup dates
1 small avocado
1½ cups almonds
2 tablespoons pumpkin spice
1 cup pumpkin
Recipe Directions
1. For the crust, mold almonds and dates in a pan and chill.
2. Blend avocado, pumpkin, and pumpkin spice.
3. Pour into chilled crust and chill again in the fridge for a few hours.

I tried this with an acorn squash, because it's all I had on hand -- and I wanted to test-drive it with something small first (pre-Thanksgiving), since pumpkins can be a chore. Something was missing, not sure what. Just kind of blah tasting. I couldn't get the avo/squash/spices to blend smoothly, so I added a wee bit of agave to sweeten it a bit and get it to process easier. Even then, still missing something. Probably better with real pumpkin, I guess.

Did you cut the pumpkin to get it? I have several pumpkins but they are super hard. How do you blend that?

Hi Did you blend your pumpkin in a vitamix? I only have a blender and a small cuisinart that holds 2 cups. Maybe cuisinart first then blend? I have an acorn squash but not a pumpkin right now do you think that would work?

Just out of curiosity how does the avocado fit into the recipe? And if I can't get avocado is there a good substitute? (I personally MISS avocados but they're not available here) Anyone had that problem? What did you use instead?
