Yield
6 wraps -
Equipment
None
Ingredients
1 bag raw kelp noodles
8 cherry plum grape tomatoes (diced)
1/3 red onion (diced)
½ inch ginger root (minced)
2 cloves garlic (minced)
1 large lemon (squeezed)
1 small handful of cilantro (chopped)
1 tablespoon agave nectar
3 jalapenos (without seeds, chopped)
1 tablespoon black pepper
1 teaspoon cayenne
1 teaspoon salt
6 large leaves of lettuce
Recipe Directions
1. Prep all veggies and place in bowl. Add spices and agave.
2. Put noodles in large bowl and add all ingredients.
3. Mix and wrap in lettuce leafs. I like it hot so I used three medium jalapenos. You could use less if you don't want it quite as hot.
Vegasgreen's Thoughts
By VegasgreenI was surprised when I first took a bite. A lot more flavor than expected.
I’m always craving spicy foods when eating raw. This definitely helps to satisfy.
The noodles combined with the other ingredients without the lettuce is really good by itself.

Hm, can't figure out how the noodles listed in kelpnoodles.com could be considered raw . . . regardless, it seems like I could soak regular (raw) kelp and slice into noodles myself. In any case, I'm looking to include more seaweed in my diet, and would love to try this recipe--could the author (or someone else) comment on how much a bag of kelp noodles weighs? Ounces would be great, but I'll be happy with grams, too (it should say on the package). Thanks in advance! Can't wait to try this.

There was nothing I could find on the website to indicate they were raw, is all . . . but now I see it on their FAQ page: http://www.kelpnoodles.com/about_us_faq.html. Thanks Vegasgreen for the ounce measurement and the recipe; I'll try this with regular kelp first and report back!

ambiguous, regular kelp is NOTHING like the kelp noodles - they don't even taste like seaweed.
Vegasgreen, thank you for the idea - I don't like spicy food, but I love kelp noodles, so I'll probably leave out the jalapenos. Great recipe!

Ambiguous, I know you can't believe everything you read but the bag says it a raw food and it doesnt seem to have been processed or heated up in any way. I buy them in a 12 ounce bag.
