YieldA few servings
Meat from 3 young coconuts
Water from 1.5 of the coconuts
2 cloves garlic
1/2 chili pepper
Saffron threads (dissolved in hot water)
Olive oil or coconut oil
2 packages of kelp noodles
Slices of baby portabella
Maitake or enoki mushrooms
Slices of shiitake mushrooms
Chopped green onion
Mung bean sprouts
Pine nuts or chopped cashews
Drizzle of sesame oil
1. Blend the first ingredients in a Vitamix.
2. Prepare the packages of kelp noodles. Rinse when soft. Toss with sauce.
3. I stick the entire mix into the dehydrator to warm and soften the noodles further.

This is a raw Thai curry coconut noodle dish with 3 types of mushrooms.
You're going to have to eyeball the amounts because I tend to go with "a little of this and little of that" and not use measurements. Sorry.
