Yield
2 sheets or 20-30 pieces of small ice cream scoopers
Ingredients
1 cup flax meal
2-3 medium apples (chopped)
½ cup currants
1 cup almond pulp (wet)
½ cup unsweetened coconut flakes
1 tablespoon cinnamon
1 teaspoon vanilla
½ cup agave nectar
Recipe Directions
1. Process apples until they are small pieces. Add apples and the rest of the ingredients in a bowl. Mix with hands until incorporated, it’s fun!
2. Using a small ice cream scoop, scoop out and place on the Teflex sheets. Dry overnight and 4 additional hour the next morning. Enjoy the little energy cookies!
Note: You can add walnut pieces into the cookie as well! You can also make round cookie shapes, not a problem.

I get a small ice cream scoop and use that for each of the cookie so they all shape and dry evenly.

I always dehydrate my almond meal after I make milk and then use it for coconut macaroons or cinnamon rolls. It works great.

I make something very similar but instead of dehydrating, I pop them in the freezer:)

smoothielove, i've heard people use the oven at "warm" temp. Not sure how long it can be dehydrated but that may be an option!

Me too and that's great! I always just toss it because everyting I tried to make with it turned out... not as good as i hoped. Now I got some great guidelines. THANKS!
