12 small cookies
Ingredients
1 cup cashews (soaked for 4 hours)
Zest of 1 lemon
½ cup fresh lemon juice
1 cup dry shredded coconut
¼ cup agave
Recipe Directions
1. Process cashews in food processor until they are pasty in consistency.
2. Mix in all the other ingredients.
3. Place 1 tablespoon sized cookie dollops onto a dehydrator sheet.
4. Dehydrate for approximately 12 hours at 105 Fahrenheit (could also dehydrate at 115 Fahrenheit for 8-10 hours with similar results).

Good point about the nuts being soaked rawclaire! I don't eat any unsoaked nuts either, what a coincidence!! Thanks for the recipe kandace, I just looked at your profile and your recipes are amazing!! You truly are a raw chef, kandace :)

OMG Kandace how on earth did this blow into your mind??!!!!!!! I was at first disappointed when i saw cashews in it because usually when cashews are in a cookie recipe they are not soaked... and I can't eat unsoaked nuts. But then I just filled up with delight when I saw the soaked for 4 hours part!!! I thought oh wow this is something I can actually eat. They look like lemon meringue cookies!!! I will soak my cashews tomorrow thank you so much for this recipe!!

These are so incredibley yummy. They remind me of Lemon Bars my mom used to make when I was young. This will be a regular dessert around the house.

BLISS. Aside from being a durian lover and chocolate freak I adore tart lemon flavors too. And even though I'm eliminating large amounts of citrus from my diet. This recipe stays. Life is too short not too enjoy this cookie. I bow to you.;o)

These are sooooooooo good. I saw them mentioned on the forum topic about things to make in double batches. The lemon taste is so wonderful it will be ages before I start experimenting with other flavors. I have just recently had a sweet craving and this is just the thing to satisfy it. I think this is probably the best "uncooked" recipe I have tried to date!

I just made these with lime juice instead of lemon with a touch of vanilla--- sooooo good! The first batch my kids devoured the dough before I got a chance to get them dehydrated!

Hi,
I made these. They are wonderful. I wanted to mention to the person above who was dissatisfied with her try that they may have needed to stay in the dehydrator longer to mellow the lemon, or she could add a little vanilla bean or pure extract to round it out; maybe a pinch of sea salt. I ended up having to do them with pecans(no cashews) and I actually think I added too much coconut and they are STILL a tasted great. Thank you to all who contribute these fabulous recipes. You are helping me to move in a most positive direction. I hope to contribute in the future. Kandace, you are a woman to be greatly admired. thanks.

I just made a double batch of these with the inclusion of: 1/4 dried blueberries, 1/2 vanilla bean, 1T Maca, and 1T Mesquite. Good thing I made a double batch... half of it never made it to the dehydrator.

Fantastic! Next time, I'm going to use key limes instead of lemons to make a raw version of key lime cookies. Great recipe!

Mine are in the dehydrator now and they don't look anything like yours. I think I overprocessed them because the batter turned into a solid paste, not crumbly at all. They taste ok.
What'd I do wrong???

I just put a batch of these in the dehydrator and I don't know if they'll make it the full 12 hours! The dough was sooo delicious. FYI Elizabethh, I didn't have cashews so I used macadamia nuts and from the taste of the dough I think it's a real good match. Thanks Kandace for sharing this recipe and thanks also to the rest of the Goneraw staff for making sure the good ones come around more than once!

Don't try to make a tripple batch unless you have a really big food processor. Only a double batch fits. OOOPPSSS.
Made these today with almond pulp and added coconut water for moisture. They are partially dehydrated and so far they are very good.
