12 small cookies
Ingredients
1 cup cashews (soaked for 4 hours)
Zest of 1 lemon
½ cup fresh lemon juice
1 cup dry shredded coconut
¼ cup agave
Recipe Directions
1. Process cashews in food processor until they are pasty in consistency.
2. Mix in all the other ingredients.
3. Place 1 tablespoon sized cookie dollops onto a dehydrator sheet.
4. Dehydrate for approximately 12 hours at 105 Fahrenheit (could also dehydrate at 115 Fahrenheit for 8-10 hours with similar results).

I made these cookies a few days ago and they were great. I think i added too much lemon for mine but they were very tasty. Thankyou very much. Im going to try different combinations. One quick question, how long would they store for?

I just put a triple-sized batch of these in the dehydrator. I already can't keep my hands out the dough, and I can't wait to wake up to these in the morning! I'm curious if the base of cashew and coconut could be used for other cookies, something like chocolate raspberry - maybe I'll experiment with that next!

I just took these out of the dehydrator and they are wonderful! Zesty and not too sweet, with a perfect cookie texture. Even my non-raw DH tasted them and asked if they were for just for the kids or if he could have some too. Thanks, Kandace!

These were excellent!! So easy and quick (I put them in the dehydrator before going to bed, so I had a few with breakfast)! Thank you for putting this recipe up, as non-raw desserts have been my weakness lately. These will help me get back on track!

These cookies are amazing. This definitely falls into the "can't believe they're raw" category.
