Purple Mineral Monster Smoothie

This is a wonderfully healing and mineral rich smoothie. Thick, tasty, and so good for you!

Don't be afraid of the comfrey! It is very safe to eat and use every day (yes, internally!).

It is one of the best healing herbs that there is, but it has gotten a bad rap.

If you are still hesitant, then just leave it out.

 

Sweet Peppermint Ice Cream

We finally got an ice cream maker!

I've been making some raw ice creams, but this one has to be my favorite.

It is sweet and refreshing. Great for summer!

The texture for this ice cream is probably not as creamy as some, but it is really good. This recipe is also quick and easy to make.

If you don't have an ice cream maker, you can make this using any method for making ice cream.

Chocolate Coconut Mousse Pie (aka Mississippi Mud Pie)

Coconut mousse in a decadent chocolate crust!

I don't really know what a Mississippi mud pie is. The one time I went to eat one, they took way too long and we had to cancel the order to get where we needed to be on time.

But my friend in passing mentioned it was chocolate and coconut pie. I don't know if that's right, but it sounded pretty tasty.

I've been thinking about it for a while. My plans had to change a bit on account of my lack of nuts and agave.

Lemon & Black Pepper Celeriac Risotto

It’s mid-winter here in New Zealand and the organic supermarket is full of celeriac and fennel, two vegetables that go well together in a kind of rustic French way.

Celeriac is one of those underrated but highly versatile vegetables that often gets shunned for it’s rather inelegant appearance.

It’s not the root of celery as it’s name suggests but kind of like a cousin, similar in flavor but a little more nutty.

With the fennel, lemon, and celeriac, this whole dish is very high in vitamin C.

Fresh Corn and Avocado Salad

What better time to share this simple salad recipe than when the farmer’s markets, roadside stands, and grocery stores (if you must!) are brimming with tender ears of sweet corn.

I created this recipe last year after learning from a local farmer that you can eat sweet corn raw without it ever touching a grill or a pot of boiling water.

I was able to convert many naysayers last summer, and now it’s time for me to make a believer out of you!

This salad is even better the next day!

Refreshing Summer Coconut Pops

I wanted to make a popsicle that was close as I can get to a coconut popsicle I had tried when I was eating cooked.

So when we had young coconuts, and it was almost 101 degrees out, I came up with these. Enjoy!

This is a hearty and satisfying vegetable soup that is made in a snap with your blender.

We highly recommend garnishing it with chopped green onions, diced avocado, and Rawmesan. Sure to satisfy any appetite and palate.

I made a batch last night.

I made a version of this last summer with my garden tomatoes. I have only been raw for 18 days. High raw, I might add!

This time I didn't put the tomatoes in boiling water for a minute to remove skins, and it didn't seem to matter.

It was still awesome!

Will keep in the fridge for a long time.
